This is take two on a recipe I tried last year (see below). It needed a bit of work (the bitter part is what was missing, now provided by Pimm’s Cup), and I also didn’t have a name for it. It’s Andrew Volk, of Portland’s Hunt and Alpine Club, who suggested the name « Le Professionnel », adding that « only a professional » would think about mixing marc and boukha. Only a professional – or someone a bit crazy, maybe? Great, fun drink, anyway. Different and energizing.
